The smell of my bubbe’s chicken soup is something that brings me right back to her kitchen. Both stomach and soul filling. The whole thing about Jewish penicillin may not be scientifically true, but I dare anyone not feeling well to try a bowl and not feel so much better. Simple to make. it freezes well to save for those times you’re not quite feeling great. Try this recipe and see if I’m not right. 

Ingredients

2 Chicken breasts with skin and bone

3 large carrots

3 celery stalks

handful of parsley

1 medium onion

salt

paprika

 

  • Fill a large pot with water and liberally salt it.
  • Add chicken breasts, chopped onion, carrots, celery and parsley
  • Bring water to a boil
  • Once boiling, reduce to medium, add paprika to taste and cover
  • Let simmer for one hour and thirty minutes
  • Carefully taste and add more paprika and salt as needed.
  • Turn off stove top and remove chicken breasts carefully
  • Strip meat from chicken and replace into pot. 
  • In another pot, boil water for egg noodles
  • Prepare noodles per directions on package.
  • when done, strain noodles and place noodles in bowls.
  • Pour soup over noodles
