Meatloaf
Ingredients
1 1/4 pounds ground beef
2 cloves garlic
1 egg
1 slice stale bread of roll
1/2 yellow onion
salt
pepper
- Soak the bread in a bowl of ice water until fully soaked through.
- Squeeze all water out of bread and add to a large mixing bowl
- Chop onion into very small pieces
- Crush garlic cloves (or use the equivalent in jarred minced garlic)
- Add ground beef, onion, garlic, egg, salt and pepper to mixing bowl and mix well with your hands. Really get in there and mix it the old fashioned way.
- Spray a baking dish with cooking spray (do not use butter or, god forbid, lard!)
- Add well mixed meat concoction to baking dish.
- Set oven to 350.
- Bake for 1 hour 15 minutes
- Remove meatloaf and top with ketchup. Replace in oven and cook for another 15 minutes.
- Remove and serve with mashed potatoes and a vegetable ( I added that one. Growing up, potatoes WERE the vegetable!)
