Noodle Kugel

Every holiday meal meant my bubbe's noodle kugel. Sweet and oh so filling, I'd never think the ingredients that make up this soul-warming dish could come together so beautifully. Handed down from her Russian mother-in-law, this generations-spanning dish is a family favorite.

Ingredients

1 bag of egg noodles

6 eggs

2 sticks of butter

1 cup raisins

1 cup sugar

8 tablespoons sour cream

8 tablespoons cottage cheese

 

  • Fill a large pot with water and liberally salt it.
  • Bring water to a boil.
  • Once boiling, add noodles and cook to tender.
  • mix eggs, sugar, sour cream and cottage cheese in a large bowl.
  • Drain water from noodles and put back in pot. 
  • Cut butter into tablespoon sized segments and add to pot with noodles.
  • Stir until butter is mostly melted.
  • Add stirred ingredients from bowl into pot and stir so noodles and everything else are thoroughly mixed.
  • Spray a baking dish or foil pan with cooking spray.
  • Add everything from pot into baking dish and bake at 350 for 1 hour, or until it reaches a nice brown on top. (You might want to put the tray on a cookie sheet so nothing boils over and creates a smoky mess like I have on my hands right now….)
  • Remove from oven and set aside to cool.
  • ENJOY!!
